Vanilla fudge recipe
Ingredients
300ml milk
350g caster sugar
100g unsalted butter
1 tsp vanilla extract
Method:
Line a slice tin with baking paper and set aside.
In a small non-stick saucepan, heat the milk, sugar and butter, stirring until all is dissolved.
Bring to the boil and simmer, stirring constantly for for 15-20 minutes or until it reaches soft ball stage ( 115°C-118°C).
Remove from heat and pour in vanilla extract. Beat with a wooden spoon until the mixture starts to thicken. Pour into the slice tin and cool. Refrigerate for 4 hours and remove from the tin and slice into squares.
